• Turkey Bruschetta Sandwiches

    Tired of the same old turkey sandwich? Here’s one way to liven it up! This recipe makes enough to top 2 sandwiches. You can use this bruschetta for just about anything…it’s delicious! Instead of turkey you can use grilled chicken, or leave off the turkey and you’ll have a wonderful bruschetta caprese sandwich.

    Ingredients:

    • 1/2 c. grape tomatoes, chopped
    • 2 TBSP basil, chiffonade
    • 1 garlic clove, minced
    • salt and pepper to taste
    • 1 tsp. olive oil
    • 2 tsp. balsamic vinegar
    • 2 ciabatta rolls
    • Turkey slices
    • Fresh mozzarella, sliced (optional)

    Directions:

    1. Combine tomatoes through balsamic vinegar in a bowl. Set aside.
    2. Toast the rolls; then add the cheese (if using), then the turkey, and top with the bruschetta. Enjoy!

  • Salmon Sandwiches

    I found this recipe at Taste and Tell, and she got it from Barefoot Contessa Parties cookbook. It’s more about the sauce than the fish, and the sauce tasted delicious!

    Ingredients:

    • 1/2 c. mayonnaise
    • 1/8 c.sour cream
    • 1/2 tsp white wine vinegar
    • 6 fresh basil leaves
    • 1/2 c. chopped dill
    • 3/4 TBSP chopped scallions, white and green parts
    • 1/8 tsp. kosher salt
    • 1/8 tsp. black pepper
    • 1 1/2 tsp. capers, drained
    • Salmon, grilled, baked or broiled
    • Greens
    • Rolls

    Directions:

    1. Place the mayonnaise, sour cream, vinegar, basil, dill, scallions, salt and pepper in the bowl of a food processor fitted with a steel blade. Process until combined. Add the capers, pulse two or three times.
    2. Prepare salmon as you like. Spread the sauce on the roll, top with salmon and greens.

  • Curried Chicken Salad Sandwiches

    I love curry chicken salad. It’s so easy and so delicious. The sweetness of the grapes goes so well with the curry.

    Ingredients:

    • 1 1/2 c. shredded chicken or a large can (12 1/2 oz) of white chunk chicken breast
    • 1/4 c. mayo
    • 1 tsp. curry powder
    • 1/2 c. grapes sliced
    • Rolls and lettuce

    Directions:

    1. Combine chicken, mayo, curry powder, and grapes.
    2. Place the chicken salad on a roll and add some lettuce.

  • Turkey Sandwiches with Chipotle Mayo

    This sandwich was so delicious! If you haven’t yet tried Tabasco chipotle pepper sauce, you should. It’s so good, and we add it to everything from eggs to chili. -s, who isn’t the biggest sandwich lover, said this one was really good, and he’d have it again.
    Ingredients for 2 sandwiches:

    • 2 Ciabatta rolls, toasted
    • 1/4 c. mayo
    • 2 tsp. (or however much you like) Tabasco chipotle pepper sauce
      Jalapeno pepper jack cheese, sliced
    • Turkey slices
    • 1 avocado, sliced
    • Mescaline Greens

    Directions:

    1. Toast the roll.
    2. Meanwhile combine the mayo and Tabasco sauce
    3. Slice the cheese and avocado
    4. Assemble sandwich: spread mayo on both sides of the roll, add sliced cheese, turkey breast, avocado, and greens. Slice and enjoy!

  • Meatloaf Sandwich

    If you are lucky enough to have any leftover meatloaf, it makes for a great sandwich the next day.

    Ingredients:

    • 1 Ciabatta roll, toasted
    • 1 TBSP. mayo
    • 1 slice of meatloaf

    Directions:

    1. Toast the ciabatta roll; then spread the mayo, place a slice of meatloaf on top and enjoy!
