Nothing says comfort food like a really good meatloaf. I probably make meatloaf once a year, and every time I make it I wonder why I don’t make it more often. Leftovers make for delicious sandwiches too. Not the prettiest main dish to photograph, but it was definitely a hit…my kiddos devoured their meatloaf!
Ingredients:
- 2 lb. lean ground meat
- 1 c. Italian seasoned bread crumbs
- 3/4 c. milk
- 2 eggs
- 2 TBSP minced onion
- 3/4 tsp. salt
- 1/4 tsp. pepper
- Top with 1 c. ketchup, or how ever much you like
Directions:
- Preheat oven to 350.
- Mix all ingredients (through pepper) together.
- Bake in an ungreased loaf pan for 1 1/2 hours. After 1 hour add as much or as little ketchup as you want to the top of meatloaf, and then bake for the remaining 30 minutes.

Made this last night – yummy! I suspect I didn’t use as lean of beef as you did – it ended up sort of poaching in it’s own fat by the end.
Jeff I’m glad you liked it! 🙂 If you get some fat poaching on top of the meatloaf, just skim it off before you put the ketchup on. Even with the leanest meat you’ll have some accumulation on top–looks gross but easily removable.
