Vegetarian Baked Beans

If you like Heinz vegetarian baked beans, you’ll love these. My recipe isn’t thick and creamy like Heinz, but the flavors are very similar. Definitely be sure to soak your beans overnight, so that after they cook they are soft and tender.

Ingredients:

  • 1 lb. dried beans (white, pinto or red-whatever you like)
  • 3 1/2 c. water + more for soaking
  • 1/3 c. molasses
  • 1/4 c. brown sugar
  • 1 sweet onion, diced
  • 1 TBSP prepared mustard
  • 2 tsp. salt

Directions:

  1. Place dried beans in a bowl and cover with water. Remove any floaters and stones. Soak overnight.
  2. Drain beans and combine with the remaining ingredients (3 1/2 c. water through the salt) in your crock pot.
  3. Cover and cook on high for at least 6 hours (may take longer depending on your beans). Basically cook until the beans reach the tenderness you like.
