Tonight -s made a delicious brisket for dinner, and to accompany the brisket I made this side dish that is excellent. I used to make this one a lot (pre kids era), but I think I’ll be fixing this one more often now.
Ingredients:
- 1 tsp. olive oil
- 3 garlic cloves, minced
- 1/4 tsp. crushed red pepper
- 1 c. grape tomatoes, halved
- salt and pepper to taste
- 9 oz. bag of pre-washed spinach leaves
Directions:
- Heat olive oil over medium heat. Add garlic and crushed red pepper and saute for a minute or two, then add the tomatoes, and salt and pepper. Saute until tomatoes get soft, about 4 to 5 minutes.
- Add the spinach, and toss until spinach wilts. Adjust seasoning if necessary.
