Recipe from Chef Brittany Eddelbuttel.
Ingredients:
- 1/2 c. finely grated cucumber
- 1 c. whole milk Greek yogurt
- 1 TBSP lemon juice
- 1/2 TBSP olive oil
- 1 garlic clove, minced
- 1/4 tsp. salt
- 1 TBSP fresh dill, chopped
- 1 TBSP fresh mint, chopped
Directions:
- Place the grated cucumber in a cheese cloth and gently squeeze out the excess water.
- In a medium bowl, combine all ingredients. Chill until ready to use.
