Amaretti Cookies


This recipe comes from Southern Living, November 2002. I’ve heard of these cookies before, mostly watching Giada de Laurentiis’ show, but I had never tried one. I got a newsletter a few days ago with this recipe in it, so I decided to give it a try. They are different, but pretty good. Almonds are good for you so I guess you can say this is a healthy dessert.


  • 1 lb. slivered almonds
  • 2 c. powdered sugar
  • 2 tsp. vanilla extract
  • 2 egg whites


  1. Process almonds in 2 batches in a food processor or blender until finely ground.
  2. Combine ground almonds, powered sugar, and vanilla extract in a medium bowl, using hands to mix.
  3. Stir in egg whites. (Dough will be very sticky…kind of like meatloaf) Drop by teaspoonfuls onto lightly greased baking sheets.
  4. Bake at 350° for 15 to 20 minutes or until lightly browned.
