This recipe comes from Southern Living, November 2002. I’ve heard of these cookies before, mostly watching Giada de Laurentiis’ show, but I had never tried one. I got a newsletter a few days ago with this recipe in it, so I decided to give it a try. They are different, but pretty good. Almonds are good for you so I guess you can say this is a healthy dessert.
- 1 lb. slivered almonds
- 2 c. powdered sugar
- 2 tsp. vanilla extract
- 2 egg whites
- Process almonds in 2 batches in a food processor or blender until finely ground.
- Combine ground almonds, powered sugar, and vanilla extract in a medium bowl, using hands to mix.
- Stir in egg whites. (Dough will be very sticky…kind of like meatloaf) Drop by teaspoonfuls onto lightly greased baking sheets.
- Bake at 350° for 15 to 20 minutes or until lightly browned.
